Ingredients

5 lbs chicken wings

2 tablespoons clarified butter

1 tablespoon sea salt

½ cup Kumana Be Hot Avocado Sauce

6-8 sprigs cilantro

Preparation

Preheat oven to 400. If wings haven’t been prepped by the butcher, trim the wing tips and separate the drumettes from the flats. Line two large, rimmed baking sheets with parchment paper and place a wire rack inside each one.

In a large mixing bowl, combine the wings, clarified butter and salt; toss well to coat. Divide wings between the prepared baking racks, leaving space around each one for even browning. Bake until cooked through and golden, 40-45 minutes.

Remove wings from oven. Using tongs, add to a large, clean mixing bowl. Pour Kumana sauce onto wings, stirring well to thoroughly coat. Replace wings onto wire rack trays and return to oven to bake until sauce melts into chicken skin, about 8 minutes.

Place baked wings on a serving platter and sprinkle with minced cilantro if desired. Serve with Creamy Kumana Dip (recipe follows) and veggie sticks.
